Cabbage never tasted so good
Our Oriental Salad recipe is one that’s been kicking around Mom’s recipe box for years. Our test kitchen team has had this wonderful crunchy salad turn up at all kinds of events, and it never fails to please a hungry crowd. The ingredients include the under appreciated cabbage and those ever present Iciban noodles that helped many a college student keep their student loan amount down. The combination of the ingredients creates a nutty and refreshing salad that compliments just about any meal.
A good salad is a joy. These day, with the ‘bag o’ salad’ readily available at the local grocery store, there’s no excuse not to offer a salad or two at your meal.
This salad needs some advance preparation, but a tasty tossed salad can be assembled right in front of your guests, or better yet, get your guests in on the meal prep and have them assemble fresh ingredients into a salad. It’s a wonderful way to ‘break the ice.’ In upcoming weeks we’ll present another salad recipe for you to try.
Alternatives
Anyone who cooks oriental dishes know that sesame oil, rice wine vinegar and soy sauce are powerful ingredients. Our test chef has added several drops of sesame oil to the salad with good results. Rice wine vinegar with a splash of soy sauce as a substitute for regular white vinegar is also pleasing. The real fun comes in adding other ingredients (at the last minute) to the salad. Bean sprouts, pine nuts, yellow and red peppers and cashews are all wonderful additions to this already nutty tasting salad. Have fun with this salad and experiment after mastering the original.
